For the bread:
3-4 over-ripe bananas
1/3 cup melted butter
1 cup sugar
1 egg, beaten
1 tsp vanilla
1 tsp baking soda
1 1/2 cups of flour
dash of salt
For the swirl:
1/4 cup sugar
1 tbs cinnamon
1. Preheat oven to 350 degrees F and butter/flour loaf pan.
2. Mix bananas, butter, sugar, egg, and vanilla together. Sprinkle baking soda and salt around top of banana mixture. Gently stir in flour, be careful not to overmix batter.
3. In a small dish, mix together the sugar and cinnamon for the swirl.
4. Add 1/2 of the batter to the loaf pan and then spinkle half of the cinnamon-sugar mixture all over the batter in the pan. Add the rest of the batter and sprinkle remiaining cinnamon-sugar mixture on top.
5. Bake for 55-60 minutes. Serve warm with butter (but it tastes good cold too!)

ReplyDeleteit's true that i've enjoyed every banana bread recipe that i've tried, but i have no doubt that this one would rise to the top of the rankings--that swirl is fierce and awesome. cinnamon rules.
